The Hungry Husband was craving a chocolatey treat the same time
my Mum-in-law asked me how I make marble cake.
So here goes a quick and easy recipe, that’s fun to do too!
I love baking this for our African friends, especially our friends from the villages.
I usually double or triple this recipe and make a few cakes at a time.
Cake is not a convenient commodity here like it is back home, so they devour it voraciously!
All you need are basic ingredients found in any baker’s kitchen and a chopstick (or any skewer)! : )
Food for Love:
- 2 cups plain flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup butter (room temperature)
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla
- 1/3 cup cocoa
The Act:
1. Beat butter and sugar till light and fluffy.
2. Beat in the eggs one at a time.
3. Stir in the flour. Add vanilla.
4. Divide batter into 2 bowls.
Most marble cakes look like 70% vanilla and 30% chocolate.
But Cliff really prefers it in the opposite ratio so that it’s more oh-so chocolatey!
5. I divided mine 70/30, with 70% of the batter being chocolate.
To achieve this, I added about 1/3 to 1/2 cup of cocoa powder to the bigger portion of batter.
The chocolate becomes a little thicker, but still gooey.
6. Dollop the vanilla and chocolate batter alternately in the baking tin.
Using a chopstick, SWIRL!
The key is NOT to over-swirl, or the colors will start to dilute each other.
Cliff thought it would be a good idea to film it for Mum, and has proudly named it
“THE MYSTERY OF THE MARBLE CAKE SWIRL”, haha.
7. Bake at 175 degrees Celsius and that’s it! : )
